This was sooo yummy! Everyone loved it, even the baby!!
VERY simple to make. I came across this recipe over at Kevin and Amandas site Amanda uses teriyaki sauce and ranch dressing for added flavor on the chicken, I did not though. I am sure it would be great with it. Maybe next time.
What I did was…I bought a bag of boneless breasts,washed and patted them dry,seasoned them to my liking, which included smoked sea salt and adobo, covered them with real bacon chips, and then chedder cheese. I baked then for 35 mins at 400 degrees. All ovens vary.

Garlic Lemony Roasted Chicken
3 lb whole chicken, cleaned and giblets/neck removed
1 lemon
1 cluster of garlic
salt and pepper
onion powder
Clean chicken and pat dry. Spray pam in baking dish roaster. Rub salt and pepper on chicken and any other of your favorite seasonings. Cut garlic cloves open and stuff inside the chicken. Cut lemon in half and stuff 1/2 of that in the chicken as well. Drizzle the remaining lemon half over the chicken. Bake 375 degrees- 1 to 2 hours, depending on your chicken size. There should be no pink in ita dn juices should run clear when fork pokes it.
Very juicy! Lemony and garlicy.
This a great dish to have when company is over. I have also made it in the crock pot before but it won’t have the crusty skin on top when done in the crock pot.
