Ingredients
- 3/4 cup rice of your choice
- 1 (13 1/2 ounce) can evaporated milk
- 2 cups water
- 1/3 cup sugar
- 1/2 cup raisins
- 2 capfuls of vanilla
- 3/4 teaspoon salt
- pinch of cinnamon
Direction
- Combine all ingredients in slow cooker; stir well.
- Cover and cook on Low for 4 to 5 hours,until rice is tender and fluffy.
- Stir twice during cooking period.

I made this today in my crockpot. It will serve about 14 people. Great for Pot lucks! Very filling too. I have the big white oval crock pot. They sellt hem at Target for $30 dollars but I got mine after Christmas one year for $20 (You can always visit the Goodwill or yard sales if you do not own one.They are great to have!
1 jumbo can (4 cups) of chicken cups broth
1 diced onion
1 lb of cooked ground beef, browned and drained on the stove top
1 bell pepper, seeded and chopped
2 cups of milk
32 oz Velveeta, cubed
2 cups of shredded cheddar cheese
2 potatoes, cut in 1-inch cubes
2 garlic cloves, minced
crumbled bacon, optional (I added a half cup of bacon bits. My husband loved the flavor it gave this soup.)
Throw it all in your crockpot and cook for 6-7 hours on low.

Crock Pot Rice Pudding
1-1/2 cup cooked rice
16 oz half & half
3/4 cup raisins {optional}
3 eggs
1/2 tsp cinnamon
2/3 cup sugar
2 tsp vanilla
Grease of crock-pot with butter or spray pam.
Beat half and half, eggs, sugar and vanilla with electric mixer. Stir in rice and raisins. Pour in crock-pot. Sprinkle nutmeg on top.
Cover, cook on high for 30 minutes. Stir well. Cook on low, 2 hours.
Makes about 8 cups.
My dh loves this but without the raisins.

Upside Down Chocolate Pudding Cake
1 cup bisquick baking mix or homemade
1/2 cup sugar
3 tablespoons cocoa powder
1/2 cup milk
1 teaspoon vanilla
1/3 cup cocoa powder
1/2 cup sugar
1 2/3 cup hot tap water
Mix the first group of ingredients together and spoon batter evenly into lightly greased crock pot. Combine the second group of ingredients and pour over the batter that is already in the crock pot. Cook on high 2-1/2 hours or until batter no longer looks shiny on top. Serve with your favorite ice cream!
Very rich and yummy!

6 to 8 boneless, skinless chicken breast halves {I also have made this with a whole 3lb bird}
2 tablespoons butter
1 can 7-Up {I use store brand}
1 teaspoon seasoning salt
1 teaspoon parsley flakes
Place chicken in bottom of crock pot. Add butter.
Mix 7-Up with salt and parsley. Pour over top. Cover and cook on LOW for 6 to 8 hours until tender.
This is a family favorite.Has a rich buttery flavor with a tad of sweetness.

Creamy Crock Pot Macaroni and Cheese
2 cups uncooked elbow macaroni
(1/2 stuck) butter, cut into pieces
2 1/2 cups (about 10 ounces) grated Cheddar cheese
1/2 cup sour cream
1 (10 3/4-ounce) can condensed Cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk
Boil the macaroni until tender, about 7 minutes. Drain. In a medium saucepan, mix butter and cheese. Stir until the cheese melts. In a slow cooker, combine cheese/butter mixture,sour cream, soup, salt, milk, and stir well. Then add drained macaroni and stir again. Set the slow cooker on low setting and cook for 2-3 hours, stirring occasionally.
We always double this recipe so tat we have leftovers for the next day. It is my kids favorite and I make it twice a month!
