SWEET BAKED APPLES

6 apples
raisins
1 cup water
1 cup brown sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
Core the apples and peel the very top as shown.
Fill the hole with raisins.
In a small saucepan, heat the water, brown sugar, cinnamon, and nutmeg until boiling. Pour the sauce over the apples. Bake at 350 for one hour. Easy as 123!

There is something real special about eating liver and onions. It is a frugal meal and there is loads of nutrition in it.

2 beef liver, sliced 1/4 inch thick
2 tablespoons butter
1 sliced onion
1/2 teaspoon seasoning salt (I use Adobo)
1 cup milk
2 large eggs
3 cups dry breadcrumbs
2 tablespoons vegetable oil
Soak liver in cold salted water for 20 minutes. In your skillet, melt butter over medium heat. Add onion and cook, stirring occasionally, until tender and lightly browned…. Sprinkle with salt if you like. Keep warm. In a shallow bowl, whisk together milk and eggs until well blended. Place bread crumbs in separate shallow bowl. Rinse liver under cool running water. Pat dry with paper towels. Dip into milk mixture, then into bread crumbs, coating evenly. Heat oil in skillet over medium heat. Add liver and cook 2 to 3 minutes on each side or until cooked through. Top with yummy onions!! Serve with garlic toast. This can serve 6

This is a very frugal meal. Just take 2 slices of your favorite white bread and spread one with your jelly of choice and the other with peanut butter.
Serve with your favorite chips!

Rice and Black Beans
1 1/2 cups water
1 cup instant brown rice
1 (15-ounce) can black beans, rinsed and drained
1 teaspoon adobo seasoning with cumin
Bring the water to a boil in a medium saucepan. Add rice, black beans and adobo seasoning and bring to a simmer. Reduce heat to low, cover and simmer 10 minutes. Remove from heat and let stand 5 minutes. Fluff with a fork. ENJOY!
I make this just for myself. No one else loves beans the way that I do. It is a great frugal meal non the less.

Rice Lasagna
1 pound ground beef or bulk pork sausage
1 28- to 32-ounce jar spaghetti sauce
2 slightly beaten eggs
2 cups cottage cheese (about 16 ounces)
1 8-ounce package shredded mozzarella cheese (2 cups)
4 cups hot cooked rice
1/4 cup grated Parmesan cheese
In skillet, cook ground beef, until meat is brown. Season as you wish. Drain off fat. Stir in spaghetti sauce; heat through.
Meanwhile, in medium bowl, stir together the eggs, cottage cheese, and mozzarella cheese; set aside.
In 3-quart rectangular baking dish, layer half of the meat-sauce mixture, half of the cooked rice, and half of the cottage cheese mixture. Repeat layers. Sprinkle with Parmesan cheese.
Bake, uncovered, in a 350F oven about 40-45 minutes or until top is golden. Let stand 10 minutes before serving.
This is a very frugal 5 dollar meal! Everyone loves it!
