This makes two pies.

Ingredients

2 cups of sugar (You can use Splenda if your diabetic.)

2 cups of buttermilk

1 cup Bisquick biscuit mix

1 stick butter (melted)

2 teaspoon of vanilla extract

6 large eggs

2 frozen pie crusts

Directions

Preheat oven to 350 degrees

Mix all ingredients in a bowl and blend for 1-2 minutes with your electric mixer. Pour mixture into prepared pie shells…and that is all there is to it!

Bake for about 50-60 minutes… or until a toothpick inserted in the center comes out clean.

Cool for 15 minutes.Sift a little powdered sugar on top if you like… Serve slightly warm.

If you want to alter this recipe…you can add 1/2 a cup of maple syrup but make sure to cut the sugar by 1/2 cup. OR, You can add 1/2 cup of pumpkin pie filling (the one that is sweetened, and minis a 1/2 cup of white sugar. OR, you can add a cup of white sugar and a cup of brown sugar. The variations are endless! I have made it all different ways these past few years. Experiment and have fun in your kitchen!!!

This is a basic Amish pie recipe which was called the poor mans dessert years ago because it is nothing fancy and most ladies always had the pantry staples that it calls for. :o)

Dreamy Chocolate Peanut Butter Pie
1 prepared graham cracker crust {I use the deep dish one found on the baking aisle}
FILLING

12 oz. cream cheese, at room temp or softened in the microwave.
1 1/2 c. peanut butter
1 1/2 c. sugar
1 c. whipping cream {This gives this pie a great creamy texture}

TOPPING

12 oz. chocolate chips
1/2 cup whipping cream

Preheat oven to 350 degrees.

  Mix the softened cream cheese, peanut butter and sugar together in a large bowl until well blended. Whip cream until stiff and fold it into the cream cheese mixture.  
Spoon this filling into the prepared crust. You can also make your own crust if you have the time.

Prepare the topping:

Combine chocolate chips and the cream in a saucepan. Cook over low heat, stirring until melted. Carefully pour topping over pie and refrigerate uncovered for 4 hours.

Chocolate Buttermilk Pie

1 1/2 cups chocolate chips
1 1/2 cups sugar
1/4 cup  flour
1/2 teaspoon salt
6 eggs
1 cup buttermilk {I use the powder kind}
1 1/2 tablespoons vanilla extract
1 pre-made store-bought deep dish pie crust

Preheat oven to 325 degrees.

Place the chocolate chips in a double boiler and melt over low heat, stirring constantly. Or you can microwave them.
  Whisk together the sugar, flour, and salt until well combined. In a large mixing
bowl, combine the eggs, buttermilk, and vanilla. Add the sugar mixture and mix with an electric
mixer then stir the melted chocolate into the batter.

Pour batter into the piecrust.. Place pie in oven on middle rack. Bake for 1 hour and 15 minutes  or until the pie is crisp on
top and a knife inserted in the center comes out with just a bit of moist chocolate on it.

Remove from oven and cool completely. Let stand at least 1 hour before serving. This pie can be served warm or chilled.

Key Lime Pie

1/2 cup key lime juice (I have used just lime juice too before)
3 eggs yolks
1 can (14 oz.) sweetened condensed milk
9 in. graham cracker pie crust

Mix juice, yolks and milk until blended. Pour into pie crust and bake at 350 for 15 minutes. Let cool for 10 minutes then refrigerate. Top with whipped cream.

Super easy and super yummy. Key lime pie is my favorite. When I make it though, is is just for me. No one else likes it…
